Ingredients
- Spaghetti400g
- Pancetta or Guanciale150g
- Large Egg Yolks4
- Pecorino Romano Cheese50g, grated
- Black Pepperto taste
- Garlic1 clove (optional)
Instructions
- Cook spaghetti according to package directions.
- While pasta cooks, fry pancetta in a pan until crisp. Add garlic for the last minute if using.
- In a bowl, whisk egg yolks, grated pecorino, and a generous amount of black pepper.
- Drain pasta, reserving some pasta water. Immediately toss hot pasta with the pancetta.
- Remove from heat and quickly mix in the egg mixture. Add a splash of pasta water if needed to create a creamy sauce. Serve immediately.
