Ingredients
  • Spaghetti400g
  • Pancetta or Guanciale150g
  • Large Egg Yolks4
  • Pecorino Romano Cheese50g, grated
  • Black Pepperto taste
  • Garlic1 clove (optional)

Instructions

  1. Cook spaghetti according to package directions.
  2. While pasta cooks, fry pancetta in a pan until crisp. Add garlic for the last minute if using.
  3. In a bowl, whisk egg yolks, grated pecorino, and a generous amount of black pepper.
  4. Drain pasta, reserving some pasta water. Immediately toss hot pasta with the pancetta.
  5. Remove from heat and quickly mix in the egg mixture. Add a splash of pasta water if needed to create a creamy sauce. Serve immediately.
