Ingredients
- Brown Lentils1 cup
- Carrots2, chopped
- Celery Stalks2, chopped
- Yellow Onion1, chopped
- Vegetable Broth6 cups
- Canned Diced Tomatoes1 (14.5 oz) can
- Thyme1 tsp
Instructions
- Rinse lentils thoroughly.
- In a large pot, sauté onion, carrots, and celery until softened.
- Add vegetable broth, lentils, diced tomatoes, and thyme. Bring to a boil.
- Reduce heat, cover, and simmer for 40-50 minutes, or until lentils are tender.
- Season with salt and pepper to taste before serving.
