Ingredients
  • Brown Lentils1 cup
  • Carrots2, chopped
  • Celery Stalks2, chopped
  • Yellow Onion1, chopped
  • Vegetable Broth6 cups
  • Canned Diced Tomatoes1 (14.5 oz) can
  • Thyme1 tsp

Instructions

  1. Rinse lentils thoroughly.
  2. In a large pot, sauté onion, carrots, and celery until softened.
  3. Add vegetable broth, lentils, diced tomatoes, and thyme. Bring to a boil.
  4. Reduce heat, cover, and simmer for 40-50 minutes, or until lentils are tender.
  5. Season with salt and pepper to taste before serving.
