Ingredients

  • Baking Powder2 tsp
  • Milk1 1/4 cups
  • Egg1
  • Fresh Blueberries1 cup
  • Lemon Zest1 tbsp

Instructions

  1. In a large bowl, whisk together flour, sugar, and baking powder.
  2. In a separate bowl, whisk together milk and egg. Pour into dry ingredients and mix until just combined.
  3. Gently fold in blueberries and lemon zest. Do not overmix.
  4. Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle.
  5. Cook until bubbles appear on the surface, then flip and cook until golden brown.
