Ingredients
- All-Purpose Flour1 1/2 cups
- Granulated Sugar2 tbsp
- Baking Powder2 tsp
- Milk1 1/4 cups
- Egg1
- Fresh Blueberries1 cup
- Lemon Zest1 tbsp
Instructions
- In a large bowl, whisk together flour, sugar, and baking powder.
- In a separate bowl, whisk together milk and egg. Pour into dry ingredients and mix until just combined.
- Gently fold in blueberries and lemon zest. Do not overmix.
- Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle.
- Cook until bubbles appear on the surface, then flip and cook until golden brown.
